Onions with Christmas Honey Glaze
10 md Onions
1/2 c Breadcrumbs, Seasoned*
1 c Corn kernels
1 c Zucchini, diced
1 c Grated carrots
1 c Beets, diced
1 c Water
Christmas Honey Glaze:
1/2 c Honey
1/4 c Mustard
1 tbsp Balsamic vinegar
1/2 tsp Paprika
1/2 tsp Ginger
Salt & pepper to taste
Topping:
1/2 c Breadcrumbs, seasoned*
Parsley for garnish
*Or use plain breadcrumbs and just add the seasonings of your choice.
Preheat oven to 350 degrees F.
Peel onion, slice in half lengthwise. Remove the onion centres leaving a
hollow in the centre
In a bowl, stir together 1/2 c breadcrumbs, corn, zucchini, carrots and
beets.
Firmly pack mixture into the onion halves.
Arrange in a shallow baking dish and pour water in the bottom
For Christmas Honey Glaze:
In a separate bowl, whisk together the honey, mustard, balsamic vinegar,
paprika, ginger, salt and pepper.
Drizzle half the Honey Glaze over the top of the onions. Bake 30 minutes.
Drizzle with the remaining glaze and bake for another 30 minutes.
Just before serving, sprinkle onions with 1/2 cup breadcrumbs and broil
until the crumbs are golden brown (watch them carefully).
Garnish with a few sprigs of parsley.
