Christmas Pie Recipes

Christmas Key Lime Pie, Crazy Crust Apple Pie (christmas), Deep-Dish Strawberry Pie (christmas), Creamy Lemon Christmas Pie, and Impossible No-Crust Sweet Potato Pie (christmas)

 

 

Christmas Key Lime Pie

      1 tb Plain gelatin
      1 c  Sugar, divided
    1/4 ts Salt
      4 ea Eggs,separated
    1/2 c  Key Lime juice
    1/4 c  Water
      1 ts Grated Key lime
      1 c  Heavy cream,whipped
      1 ea 9" graham cracker crust*
 
*Baked and cooled.
Mix the gelatin, half of the sugar and the salt in a saucepan.

In another pan, beat the egg yolks well. Add the lime juice and water to the egg yolk mixture. Stir the egg yolk mixture into the gelatin mixture. Cook over low heat, stirring constantly, just until the mixture comes to a boil. Remove from heat; stir in the grated lime peel.

Chill, stirring occasionally, until the mixture mounds slightly when dropped from a spoon.

Beat the egg whites until soft peaks form. Gradually add the remaining 1/2 cup of sugar, beating until stiff. Fold into the chilled gelatin mixture.

Fold in the whipped cream (reserve some for topping, if you'd like).

Pour into the baked crust. Chill until firm.

Crazy Crust Apple Pie (christmas)

      1 c  Flour
      2 tb Sugar
      1 ts Baking powder
    1/2 ts Salt
    3/4 c  Water, cold
    2/3 c  Vegetable shortening
      1 ea Egg
      1 cn Apple pie filling-1 lb 5 oz
      1 tb Lemon juice
    1/2 ts Cinnamon

In small bowl, combine flour, sugar, baking powder, salt, water, shortening and egg and mix well.

Spread batter in 9 or 10" deep dish pie pan.

Mix together the applie pie filling, lemon juice, and cinnamon; spoon mixture into center of batter. DO NOT STIR.

Bake at 425 degrees F. for 40-45 minutes or until crust is golden brown.

This recipe for apple pie actually makes it's own crust.

Deep-Dish Strawberry Pie (christmas)

    1/2 c  Sugar; to 1 cup*
    1/4 c  Flour, all-purpose
    1/8 ts Salt
      4 c  Strawberries; washed & hulled
      2 tb Butter
           Pastry for single crust pie
           Whipped Cream
 
*Depending on sweetness of berries.
Combine sugar with flour and salt. Toss lightly with the strawberries.

Fill a 1-quart baking dish with the fruit mixture and dot with butter.

Top with the pastry which has been rolled out on pastry cloth to size 1" larger all around than top of baking dish.

Fold edges of pastry under and press firmly to rim of dish. Flute edges and cut gashes in pastry to allow steam to escape.

Bake at 425 degrees for 25 minutes or until crust is browned.

Serve slightly warm with whipped cream or ice cream.

Creamy Lemon Christmas Pie

      1    Pastry shell or graham cracker crumb crust
      3    Egg yolks
      1 cn (14 oz) Sweetened condensed milk
    1/2 c  Lemon juice
           Whipped cream

Preheat oven to 325 degrees F.

In medium bowl, beat egg yolks; stir in sweetened condensed milk, and lemon juice.

Pour into a prepared pastry shell; bake 30 minutes.

Cool to room temperature and then chill. Spread with whipped cream.

Garnish as desired. Refrigerate leftovers.

Impossible No-Crust Sweet Potato Pie (christmas)

      4    Sweet potatoes, medium sized*
      1 c  Sugar
    1/2 c  All-purpose flour
    1/2 c  Butter or margarine;softened
      1    Egg
    1/2 ts To 1 tsp almond extract
           Whipped cream
 
*Peeled, cooked, and mashed.
Combine the sweet potatoes, sugar, flour, butter, egg and almond extract in a large mixing bowl and mix well.

Spoon mixture into a 9-inch pie plate.

Bake at 450 degrees F. for 25 minutes or until lightly browned.

Serve either warm or cool with a dollop of ice cream or whipped cream.
