Christmas Cookie Recipes

Christmas Pecan Butter Balls, Christmas Cookies, Christmas Rum Balls, Double Chocolate Christmas Treasures, Christmas Apricot Balls, and Best Christmas Shortbread

Christmas Pecan Butter Balls

      2 c  Flour; sifted
    1/4 c  Sugar
    1/2 ts Salt
      1 c  Butter
      2 ts Vanilla
      2 c  Pecans; finely chopped
      Powdered sugar

Preheat oven to 325 Degrees.

Combine the flour, sugar, and salt. Add the butter and vanilla. Add the pecans and mix well.

Shape into 1" balls. Bake on ungreased cookie sheet for about 25 minutes.

Roll in powdered sugar while warm. Store in tin box separated by layers of wax paper.

 

Christmas Cookies

      1 c  Butter
    3/4 c  Sugar
      3    Egg yolks
      1 ts Vanilla OR lemon extract
    1/4 ts Almond extract
  2 1/2 c  Flour, divided

-------------------Decorate with----------
           Colored sugar
           Nuts
           Candied cherries

Preheat oven to 375 degrees.

Cream butter and sugar thoroughly. Add well-beaten egg yolks and vanilla and almond extracts,.

Mix in half the flour, then turn on a floured board and knead in the remaining half of the flour.

Roll out and cut with christmas tree, star, snowman, etc. cookie cutters.

Place on greased baking sheet. and bake for 10 to 12 minutes (watch the cookies carefully).

Decorate with colored sugar, nuts and candied cherries.

 

Christmas Rum Balls

      1 c  Crushed vanilla wafers
      1 c  Powdered sugar
      1 c  Chopped nuts
      2 tb Cocoa
      2 tb Light corn syrup
    1/4 c  Rum*
     Finely chopped nuts

* or 1/4 c milk and 1 teaspoon rum extract
Mix together the vanilla wafers, sugar, nuts, and cocoa. Add the corn syrup and rum; mix well.

Shape into 1 inch balls. Roll in the finely chopped nuts.

Double Chocolate Christmas Treasures

      2 c  Flour
    3/4 c  Cocoa
      1 ts Baking soda
    1/2 ts Salt
      1 c  Butter, softened
    2/3 c  White sugar
    2/3 c  Light brown sugar, packed
      1 ts Vanilla
      2    Eggs
      2 - 12 oz packages chocolate chips
    3/4 c  Chopped pecans

Preheat oven to 350F.

In a small bowl, combine flour, cocoa, soda, and salt and set aside.

In a large mixing bowl, cream butter with sugars, vanilla, and then add eggs.

Mix flour mixture with butter mixture. Add chocolate and pecans.

Bake on an ungreased cookie sheet for 9 to 12 minutes.

 

Christmas Apricot Balls

  1 1/2 c  Dried apricots, chopped fine
    1/2 c  Condensed milk, sweetened
      1 c  Coconut
      Powdered Sugar

Combine apricots with condensed milk and coconut.

Shape into small balls and roll in powdered sugar.

Refrigerate until ready to serve.

 

Best Christmas Shortbread

2 c flour
1 c margarine
1/2 c icing sugar

Mix together the flour, margarine, and icing sugar and knead like bread for a MINIMUM of 15-20 minutes.

Chill for about an hour.

Roll out and cut into bars, poke fork holes into the cookie for design, and bake at 300 degrees F. for 15-20 minutes.

It has to be kneaded or it doesn't turn out flaky. If these are done right, you can take a bite out of them, and it will just dissolve in your mouth.

I don't roll out the dough into bars. I just pick off dough and roll into balls. I then use a fork that has been dipped in icing (confectioner's) sugar to flatten them slightly before baking.

You want them cooked, but you don't want ANY color to them at all. They are perfect if the bottoms are just starting to change color a bit.
