Christmas Divinity Fudge

  1 1/2 c  White sugar
      1 c  Brown sugar
    1/2 c  Corn syrup
    3/4 c  Water
      1 pn Of salt
      1    Egg white, beaten
      1 ts vanilla extract
      1 ts almond flavoring

Place the sugars, corn syrup, and water in a pot and cook until dissolved, then cook to hard ball stage (265F.).

Add salt and egg white to mixture. Add vanilla and almond flavouring. Beat until candy stands in peaks.

Drop by teaspoonsful onto waxed paper.

 

Christmas Rum Truffles

     12 oz Semisweet chocolate chips
    1/2 c  Whipping cream
  1 1/2 ts Rum extract
      1 ts Vanilla
    1/2 c  Powdered sugar
    1/4 c  Cocoa powder

Melt chocolate chips with whipping cream in saucepan over low heat, stirring constantly. Add rum extract and vanilla and stir until blended.

Pour into pie pan. Refrigerate until mixture is fudgy, but soft, about an hour.

Shape mixture into small balls and place on waxed paper.

Mix powdered sugar and cocoa powder in a shallow bowl. Roll balls in sugar-cocoa mixture.

Rum Pecans (christmas)

      2 c  Pecan halves
    1/4 c  Sugar
      2 tb Dark rum
      2 ts Instant coffee
    1/4 ts Cinnamon
      1 ds Salt

Combine the pecans, sugar, rum, coffee, cinnamon, and salt in a small saucepan and cook over medium heat, stirring constantly, about 15 minutes or until the sugar is thoroughly melted

Pour mixture onto wax paper. Separate the pecans as they cool.

 

Snicker Brownies (christmas)

      1    Chocolate Cake Mix
    3/4 c  Butter; melted
    2/3 c  Sweetened condensed milk
      1    Large bag Snickers Candy Bars

Preheat oven to 350 degrees F.

Mix cake mix with butter and condensed milk.

Spread out 1/2 of the mixture into a 9"x13" pan. Bake for 10 minutes.

Slice candy bars into thin slices and lay them on top of the baked crust. Add the other 1/2 of the mixture.

Put it back into the oven and bake for 20 minutes.

 

Christmas Day Snowball Kisses

    1/2 lb Butter (Softened)
    1/2 c  Sugar
      1 ts Vanilla
      2 c  Flour
      1 c  Pecans (Finely Chopped)
     15 oz Hersheys Kisses
    1/2 c  Powered Sugar

Preheat oven to 350 degrees F.

Cream butter in a large bowl. Beat in sugar and vanilla until light and fluffy. Add flour and pecans and mix well.

Chill dough in tightly covered container overnight.

Remove the foil from the Hershey's Kisses. Shape dough around kiss using about a teaspoon of dough per Kiss.

Bake 10 to 12 minutes on ungreased cookie sheet until set, but NOT brown.

While warm, sprinkle with powered sugar. Store in a covered container.
