Christmas Breakfast Recipes

Christmas Holiday Breakfast Casserole, Quick Cinnamon Roll (christmas), Swedish Oven Pancakes (christmas), Christmas Morning Breakfast Tacos, and Christmas Cranberry Scones

 

 

 

Christmas Holiday Breakfast Casserole

      8 ea slices white bread
      1 lb bulk sausage*
  1 1/2 c  shredded cheddar cheese
      4 ea eggs
  2 1/2 c  milk
      1 ts mustard
      1 cn cream of mushroom soup
    1/2 c  milk
 
*Browned, drained and crumbled.
Grease large, flat baking dish.

Completely cover bottom of dish with bread slices, allowing them to rise along sides slightly for crust. Spread cooked sausage to cover. Spread cheese to cover.

Mix eggs, milk and mustard; pour over casserole.

Refrigerate overnight (it doesn't really work if you don't)

Next morning, preheat oven to 375.

Mix soup and milk and cover casserole.

Bake for l hour 15 minutes or until completely set.

Quick Cinnamon Rolls (christmas)

3 c Whole wheat flour
1 ts Salt
2 tb Dry yeast
1 1/4 c Warm water
1/3 c Oil
1/3 c Honey
2 ea Eggs
1 1/2 c Whole Wheat flour (up to 2 1/2 c)
1 x Filling (see below)
1 x Glaze (see below)

Mix 3 cups of flour, salt and and yeast.

In separate bowl, mix water, oil, honey, and eggs. Add to dry ingredients and mix well.

Add remaining flour 1 cup at a time until dough just cleans the sides of the bowl. Do not add too much flour. Dough should be quite soft. Knead until smooth and elastic, about 6 minutes.

On lightly oiled surface roll dough into a large rectangle about 14x32 inches and 1/4 inch thick. Spread evenly with filling of choice.

Roll up as for a jelly roll, starting with the long side. Seal the seam by pinching dough togehter. With seam side down, cut into 1

1/4" slices using fish line or string. (Slide string under the roll, cross it over the top, and pull down). Place rolls cut-side up on nonstick baking sheet. Flatten slightly with palm of hand. Let rise until very light and double in size.

Bake at 350 for 12-15 minutes. (more like 25 minutes). Makes 24 rolls.

Applesauce Filling:
1 1/2 c applesauce
2 ea apples, cored & shredded
1/2 c raisins
1 T cinnamon

Spread ingredients evenly over dough.

Cinnamon Filling:
2 T soft butter
1/3 c sugar
1 T cinnamon
1 c raisins

Spread dough with butter. Mix cinnamon & sugar and sprinkle evenly over dough. Sprinkle with raisins.

Glaze:

1 c powdered sugar
1/8 c hot water
1/4 t vanilla

Mix powdered sugar, hot water, and vanilla together.

Using a spoon spread on the hot rolls as soon as they come out of the oven.

Swedish Oven Pancakes (christmas)

      4    Eggs
      3 c  Milk
      4 tb Butter, melted
      2 c  Flour
      1 ts Salt
      2 tb Sugar

Preheat oven to 425 degrees F.

In a bowl, beat eggs well; add milk, butter, flour, salt, and sugar.

Bake in a greased 9x13 inch pan for about 25 to 30 minutes. Cut into squares and serve immediately with butter and lots of maple syrup.

Christmas Morning Breakfast Tacos

      1 md Potato, boiled, diced or grated
      4 sl Bacon
      4    Eggs, lightly beaten
      4    Flour tortilla

Cook bacon until just getting crispy. Remove and drain well.

Place potato in the pan, and cook, turning occasionally, until well browned and crispy.

Cut bacon into 1 inch pieces, and add to potatoes. Immediately pour eggs over the potato/bacon mixture, and cook, stirring frequently, until firm.

Spoon mixture into heated flour tortillas; roll up and serve.

Christmas Cranberry Scones

  2 1/4 c  Flour, all-purpose
    1/3 c  Sugar, granulated
      2 ts Sugar, granulated
      2 tb Orange peel, grated
  2 1/4 ts Baking powder, double-acting
    1/2 ts Baking soda
    1/2 c  Butter
      1 c  Cranberries, coarse chopped
    1/4 c  Currants
    1/2 c  Buttermilk, skim
      1 ts Vanilla Extract

1.  In a large bowl combine the flour, sugar, orange peel, baking powder, and baking soda.

Cut in the butter until mixture resembles coarse crumbs. Add cranberries and currants; stir to combine.

Add buttermilk and vanilla to flour mixture and stir to combine (mixture will be dry).

Form dough into 2 equal balls.
 
2. Preheat oven to 400 F.

On floured surface work half of the dough into 6-inch circle, about 1/2-inch thick. Cut circle into 6 equal wedges; place wedges on nonstick baking sheet, leaving a 1" space between each one. Repeat procedure, using remaining dough.

Bake until lightly browned, about 10 to 15 minutes. Remove scones to wire rack and let cool.
